Every bowl at Purrticle starts in the reactor at the back of the house, where we grow tuna, salmon and duck from a single cell and then finish each portion by hand. Nothing here comes out of a can, and nothing goes into a bowl that we wouldn't eat ourselves. Most nights, we do.
